My Version of Jamie Oliver's yummy NYC Vodka Arrabbiata!
Die Chilischoten jeweils sechs bis achtmal mit einem spitzen Messer einstechen (die Sorte ist egal. In einem weiten Topf das Olivenöl auf mittlerer Stufe erhitzen und die Chilischoten darin 5 Minuten sanft braten. | |
Danach die Temperatur auf die höchste Stufe schalten und den Knoblauch zusammen mit den Petersilienstielen und den Sardellen zugeben. Unter ständigem Rühren braten, bis der Knoblauch hellgelb anläuft. | |
Die Tomaten zufügen, salzen und pfeffern. Zum Kochen bringen, den Wodka dazugießen und die Sauce auf kleiner Stufe köcheln lassen. Sie bekommt etwas mehr Feuer, wenn Sie zwischendrin die Chilischoten mit einem Holzlöffel leicht quetschen. | |
Die Spaghetti in einen Topf mit reichlich kochendem Salzwasser geben und nach Packungsanleitung garen. Abseihen und sogleich unter die Sauce mischen. Die Pasta entweder in einzelnen Schalen oder auf einer großen Platte anrichten. | |
Die Petersilienblätter grob hacken und darüberstreuen. Direkt über der Pasta die Zitronenschale fein abreiben, anschließend den Saft auspressen und darüberträufeln – achten Sie beim Ausdrücken darauf, dass Ihnen keine Kerne zwischen den Fingern durchflutschen. Noch ein wenig Olivenöl darüberträufeln und das Gericht dann zusammen mit einem frischen grünen Salat schnell servieren. |

I've got a variation of this recipe years ago from a friend.
She didn't know anything about cooking, but she really impressed me the day she invited me and made a Chicken-Broccoli-Braid for me...
The only thing I missed was a little Green Salad to go along with it. But I simply love any dish, to be served with a nice juicy Salad of the Season.
Last year my version of this recipe was printed in a german cooking magazine, which is called "Lecker" -
and here is my recipe!

Healthy crunchy Fish & Chips with Sauce Tar Tar
I've come along this classic recipe from one of my many cooking books and magazines and gave it my own twist.
It became a classic I make for my family.
I add oat flakes to my flour to make my fish really crispy and add a touch of healthiness. We absolutely love that.
I mix the flour & oats with Olive Oil, season with Salt & Pepper and a pinch of Paprika,
then I cover my fish with it. Press it really well to your filet so it really sticks to your fish.
You can use any type you like but I think best to use is Alaska Pollock or we really like white Halibut.
I put them on a with baking paper lined baking tray and bake them until crisp. I don't fry then!
They turn out the same crispy and juicy way as if they where fried, but are much healthier this way.
Just slice some Potatoes and add them to the baking tray, sprinkled with Olive oil and Sea salt.
The Sauce Tar Tar is very simple, use a good quality low fat Mayonnaise, or make your own - with fresh Egg yolks, Olive Oil & Lemon Juice (much healthier version), or use a mixture of low fat Yoghurt & low fat Mayo. Add 2 Tsp of chopped Capers and 3 medium sized spiced chopped Pickles. Add a handful of chopped Parsley. Season with the Juice of 1/2 - 1 Lemon and freshly grounded Salt and Pepper to taste.
Squeeze a lemon over the fish and enjoy!!!

White beans with bacon, thyme & crunchy veggie croutons topped with
yummy sausage - "german Wiener". But I guess you can use any type of
"hot dog" kinda sausage!
Dieses Rezept eignet sich hervorragend um hungrige Bäuche zu füllen!
Weisse Bohnen Suppe mit Speck, Thymian & knusprigen
Gemüse Croutons - als extra Einlage ein paar knackige Wiener, oder
irgendeine dieser Sorte, Frankfurter, Bockwurst, Servela ;-) egal!

A new twist on "Chili con Carne"
This is a special version of Chili con Carne cooked with whole Beef brisket -
a really fantastic dish which can be prepared hours or days ahead, when friends are coming over or just to chill with the family. It's tasty, yummy, fantastic & heart-warming !

Eine neue Version des altbekannten Gerichtes "Chili con Carle" zubereitet mit einem Stück ganzer Rinderbrust - ein fantastisches Gericht, das man super Stunden oder Tage im Voraus zubereiten kann, für Freunde, oder die Familie.
Es schmeckt super lecker und ist ein echter Herzenswärmer!
